Pad Thai is one of my absolute favourite meals of all time. Ever since I experienced The Lonely Planet’s top rated best Pad Thai in the world while I was in Phuket, I have been on the hunt to replicate the flavours without leaving the country.
It’s been tough, but I think this recipe just about does it.
