Gluten Free Chocolate Peanut Butter Slice

That’s right: Sugar free. Chocolate. Peanut Butter. Slice. And I promise, that title is NOT just a ruse!

While having a bit of a play around in the kitchen with some of my home ingredients, I stumbled across this fabulous little gem of a creation. Consisting of just five simple (yet delicious) ingredients, this little beauty will satisfy ALL your sweet cravings WITHOUT the guilt that comes with seeing that empty chocolate wrapper.

Gluten Free Chocolate Peanut Butter Slice

Ingredients

  • Room in the freezer
  • Loaf style tin
  • Baking paper / tin foil
  • Almond Meal
  • Cacao Powder
  • Coconut Oil
  • Rice Malt Syrup
  • Natural Peanut Butter (of course)

Instructions

  1. Line loaf tin with baking paper or tin foil
    Crust
  1. 3/4 cup almond meal
  2. 2 tbsp cacao powder
  3. 2 tbsp rice malt syrup
  4. 1 tbsp melted coconut oil
  5. Pinch of salt
  6. Combine all of the above ingredients into a moist dough
  7. Press firmly and evenly into bottom of lined loaf tin
  8. Pop into freezer
    Peanut Butter Filling
  1. 1/2 cup slightly melted natural peanut butter
  2. 3 tbsp rice malt syrup
  3. 1 tbsp melted coconut oil
  4. Pinch of salt to taste
  5. Combine all above ingredients in same bowl used for the crust (gives a bit of texture)
  6. Pour filling evenly over crust
  7. Pop back into freezer
    Chocolate Topping
  1. 1/4 cup cacao powder
  2. 1/4 cup melted coconut oil
  3. 3 tbsp rice malt syrup
  4. Combine t he above ingredients, ensuring you remove any lumpy bits
  5. Pour over peanut butter filling
  6. Pop back into freezer for about 10 minutes

And wait! After about 10 minutes, take it out of the freezer and remove from the loaf tin. Cut it in half and it should look something like…

Chocolate Peanut Butter Slice

Cut into squares or just eat whole 😛 Whichever you prefer!
